We have a variety of eggplant available, including white and purple Japanese eggplant.  To pick out eggplant, choose ones with smooth, shiny skin that are heavy for their size and uniform in color. To test for ripeness, lightly press your finger against the skin, and if it leaves an imprint, the eggplant is ripe.
